How the calculation works

Reconcile every bread-dough ingredient to formula mass, deduct handling loss, divide raw pieces, and apply a separate bake-loss assumption. Add every ingredient, apply handling retention to the total, divide by loaf count, then apply bake retention to the mixed dough.

Reconcile ingredient mass through mixing, division, and baking

The default combines 1,000 g flour, 700 g water, 20 g salt, 200 g starter or yeast, and 80 g other ingredients for three loaves.

General formula: M_f = F+W+S+Y+OH = 100W/FM_mix = M_f(1-l_mix/100)M_piece = M_mix/nM_bake = M_mix(1-l_bake/100)M_loaf = M_bake/nL_total = M_f-M_bake Ingredient addition establishes a conserved starting mass. Mixing and baking losses are sequential percentages on different bases, so they must not simply be added.

Worked substitution with the default inputs

1. Add all ingredients M_f = 1000+700+20+200+80 = 2000 g Every entered mass is included once.
2. Calculate hydration H = 100(700/1000) = 70% This field divides entered water by flour; starter hydration is not decomposed.
3. Apply handling loss M_mix = 2000(1-2/100) = 1960 ghandling loss = 40 g The two-percent loss is applied to total formula mass.
4. Divide raw pieces M_piece = 1960/3 = 653.333 g per loaf This is the scaling weight before baking.
5. Apply bake loss and reconcile M_bake = 1960(1-15/100) = 1666 gM_loaf = 1666/3 = 555.333 gL_total = 2000-1666 = 334 g Baking acts on mixed dough, and baked yield plus total loss returns to 2,000 g.

The default 2,000 g formula becomes 1,960 g mixed dough, three 653.333 g pieces, and about 1,666 g baked yield.
